This is comforting flatbread can be served all day long!

Prep
  1. Thaw flatbread covered, either at room temperature 15-30 minutes or refrigerated overnight.
Assembly
  1. Place thawed crust on a greased pan; spread olive oil the mashed potatoes evenly over top.
  2. Sprinkle on cheese, then chopped bacon; create 3 deep wells about 3-inches wide.
  3. Crack eggs into wells then season with salt and pepper.
  4. Bake as directed until eggs are fully cooked and toppings are slightly golden.
  5. Add cheese then pepperoni slices and bake as directed; cut into 8 slices for serving.

Finishing
  1. Garnish with green onion slices; cut into 8 slices for serving.

  • For a decadent runny yolk flatbread, bake as directed without the eggs, then add over easy eggs on top after baking.

  • For an even more loaded flatbread, garnish with chopped chives and serve with sour cream.
