Lemon Poppy Seed Whole Grain-Rich Squares

Start with Gold Medal™ Whole Grain Variety Muffin Mix, and with a few lemony ingredients and some applesauce, end with luscious lemon bars.

  1. Whisk applesauce, water, lemon juice, lemon extract and food coloring together until well blended.
  2. Stir 1/4 cup of poppy seeds into opened bag of muffin mix and add to applesauce mixture.
  3. Mix until well blended. DO NOT overmix.
  4. Spray or grease 2 full-size steam table pans; divide batter evenly.
  5. Sprinkle an additional 1 Tbsp of poppy seeds evenly over surface of each pan.
  6. Bake as directed below; cool completely then cut each pan into 32 portions, 4x8 cutting pattern.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.

  • Lemon Poppy Seed Bread may be baked in a full sheet pan or in 4 - long, half-size steam table pans. Bake times will need to be adjusted accordingly. Cut full sheet pan into 8x8 cutting pattern for 64 portions. Cut each long half steam table pan into 16 portions for a total of 64 portions.
  • Note: A serving of “whole grain-rich” food must meet portion size requirements for the Grains/Breads component as defined in FNS guidance and meet at least one of the following: (a) the whole grains per serving is less than or equal to 8g, (b) the product includes the FDA whole grain health claim on package, or (c) product ingredient listing lists whole grain first, or second ingredient after water.
