Dried Cranberry Walnut Bran Muffins

Bran muffins' subtle sweetness is enhanced with the addition of tangy cranberries.

Dried cranberries

Toasted Walnuts
  1. Toast walnuts on sheet pan in 350°F oven 5-7 minutes or until light golden brown.
  2. Set aside to cool.
Batter
  1. Pour 4 cups water and wheat bran into mixing bowl; allow to soak at least 5 minutes.
  2. Combine in separate bowl the remaining 4 3/4 cups water and muffin mix.
  3. Fold in soaked wheat bran, toasted walnuts and dried cranberries. DO NOT OVERMIX.
  4. Deposit #10 scoop of batter into greased or paper-lined muffin pans.
  5. Sprinkle granola evenly on top and bake as directed below.
