Dairy Free Pancakes and Waffles

Pancakes and waffles go dairy free with coconut yogurt.

Dairy free vanilla coconut yogurt

Eggs, large
1 lb

Vanilla extract
2 Tbsp
Baking powder
5 Tbsp
Granulated sugar
3 Tbsp
Salt
1 tsp
Batter
  1. Whisk together yogurt, eggs and vanilla extract in a mixing bowl until smooth and combined.
  2. Add flour, baking powder, sugar and salt to a separate mixing bowl; stir until thoroughly combined.
  3. Slowly add wet ingredients to dry, whisking together.
Pancakes
  1. Preheat griddle to 350°F; deposit #12 scoop (approx. 2.8 oz) Batter onto greased griddle.
  2. Cook 2-3 minutes until bubbly; flip and cook an additional 1-2 minutes.
  3. Serve as desired.
Waffles
  1. Preheat waffle iron to 350°F; deposit #12 scoop (approx. 2.8 oz) Batter onto greased waffle iron.
  2. Cook 3-4 minutes until golden brown and cooked through.
  3. Serve as desired.
