Croissant French Toast Bake

This is a great way to use leftover Pillsbury™ Baked Croissants and provide a daily chef’s special with this recipe as the base.

Heavy cream

Liquid whole eggs

Light brown sugar

Cinnamon, ground

Prep
  1. Thaw croissants at room temperature for approx. 30 minutes.
  2. Cut croissants into 1-inch pieces and place in the bottom of a greased 2-inch half hotel pan.
Assembly
  1. Whisk together heavy cream, liquid eggs, brown sugar, cinnamon, salt, and vanilla in large mixing bowl until fully incorporated.
  2. Pour custard mixture over the top of croissant pieces; press pieces down to help absorption of the custard.
  3. Cover with plastic wrap and refrigerate overnight to allow croissants to soak in custard.
  4. Remove plastic and allow to sit at room temperature for at least 30 minutes.
  5. Cover with greased aluminum foil tent, making sure foil does not touch top of croissants.
  6. Bake as directed until custard is nearly set, the top is golden brown and the internal temperature is 165° F; allow to stand for 10 minutes before portioning.

*Rotate pans baked in convection oven one-half turn (180°) after 27 minutes of baking.
