Cranberry Pear Whole Grain-Rich Coffee Cake

Mild, sweet pears and tart cranberries are a great team in a whole-grain coffee cake with a fruity topping.

Nutmeg, ground

Topping
  1. Combine cranberry sauce and 2 oz reserved pear juice in mixing bowl.
  2. Mix using wire whisk until well blended; set aside until needed.
Batter
  1. Pour 2 lb reserved pear juice into mixing bowl; add muffin mix and spices.
  2. Mix using rubber spatula until blended; fold in diced pears. DO NOT overmix.
  3. Deposit 4 lb 8 oz batter per pan into 2, greased, 12x20x2 1/2-inch hotel pans.
  4. Drop small scoops of topping (8 oz per pan) in pans and marble into batter.
  5. Bake as directed below and allow cake to cool for 15 minutes before cutting into 4x4 pattern.
