Spiced Rum Mini Blondie Bites with Charred Orange Icing

Individual little rum spice cakes are topped with an innovative mandarin orange icing that drizzles beautifully down the sides.

Mandarin orange segments, canned in juice, drained

Orange zest
3 Tbsp
Rum, dark

Batter
  1. Combine sugar, butter, eggs and allspice in mixer bowl. Mix on low speed for 1 minute.
  2. Stop mixer, scrape down bowl and paddle. Add rum, juice and cake mix to mixer bowl.
  3. Mix on low speed for 1 minute. Deposit batter using a #40 scoop into greased mini-muffin pans.
  4. Bake as directed below; let stand 30 minutes in pan and then remove. Place right side up on a cooling rack to cool completely.

Charred Oranges
  1. Place orange segments on a parchment-lined baking sheet.
  2. Bake as directed below or until oranges begin to char; cool completely and roughly chop.

Finishing
  1. Add frosting, zest and rum to a bowl; whisk until combined.
  2. Fold in roughly chopped orange segments. Deposit #70 scoop of icing on blondie (icing will not be firm but will set-up slightly as it stands).
  3. Refrigerate until service.
