Jumbo sugar cookies are rolled in sugar and cinnamon for a sweet-spicy treat.

  1. Combine butter and sugar in mixer bowl using paddle attachment on medium speed 2 minutes.
  2. Add eggs and mix on low speed 30 seconds.
  3. Add muffin mix; mix on low speed 1 minute.
  4. Add cinnamon and sugar to separate bowl; stir to combine.
  5. Drop #30 scoop of dough into cinnamon and sugar; roll to evenly coat.
  6. Deposit in 4 x 6 pattern on parchment-lined full sheet pans; bake as directed below and allow to cool before serving.
