Classic reuben sandwich fixin's (chopped corn beef, Swiss cheese and sauerkraut) are frozen in bite-size balls, then dipped in batter and deep-fried.

Sauerkraut, drained

Corned beef, deli thin, chopped

Water, cold approx. 50°F

Thousand Island dressing
1 lb 14.00 oz
3 cups
Filling
  1. Combine sauerkraut, cheese and corned beef in a medium microwaveable bowl.
  2. Heat in microwave approx. 4 minutes, stirring occasionally, until cheese begins to melt.
  3. Deposit mixture with #70 scoop onto parchment-lined full sheet pans; place in freezer until completely frozen, approx. 24 hours.
Finishing
  1. Combine biscuit mix and water in mixing bowl; stir until well combined.
  2. Remove reuben balls from freezer; dip into batter and place in deep fryer oil heated to 350°F for 2 1/2 - 3 minutes in small batches.
  3. Turn once halfway through for even browning.
  4. Remove from fryer, drain and serve immediately with a side of Thousand Island dressing (0.24 oz).
