A simple, yet crowd-pleasing biscuit panini sandwich, filled with warm falafel, refreshing tzatziki sauce, and classic gyro vegetables.

Falafel, prepared, held warm

Prep
  1. Thaw biscuit pucks, covered, for 30-40 minutes at room temperature or overnight in refrigerator.
  2. Place 2 biscuits (with space between) on lightly greased panini press, preheated to 350°F.
  3. Press closed until dough measures 5 x 4-inches; cook approx. 3 minutes or until golden brown.
  4. Remove and hold warm.
Assembly
  1. Split warm biscuit panini bread open without completely separating the two sides, leaving about 3-inch of biscuit panini bread still connected.
  2. Spread 1/4 cup (2 oz) of tzatziki sauce inside.
  3. To one side layer in 1/4 cup (0.5 oz) of lettuce, 1/4 cup (1.5 oz) of falafel, 1/4 cup (1.5 oz) of tomatoes, 1 Tbsp (0.25 oz) red onion, and 2 Tbsp (0.75 oz) cucumbers.
  4. Wrap if desired and serve immediately.

  • Make your biscuit panini bread ahead of time and store in refrigeration for up to 3 days. Warm to order on a flattop grill set to 350°F for 2-3 minutes or in a Convection Oven at 300°F for 2-3 minutes.
