Corn Cranberry White Chip Biscotti

The sweetness in a cornbread mix is a good match for tart cranberries in twice-baked biscotti.

  1. Mix all ingredients in mixer bowl on low speed using paddle attachment until well blended, approx. 2-3 minutes.
  2. Divide into 4 equal loaves, approx. 2 lb 4 oz each.
  3. Shape each loaf into 20 x 3 x 3/4-inch; place 2 loaves of dough on greased or parchment-lined sheet pans.
  4. Bake as directed below and allow to cool.

  1. Cut each loaf into 25 slices, approx. 3/4-inch thick.
  2. Place slices, standing upright, onto parchment-lined sheet pans.
  3. Bake as directed below and allow to cool before serving.
