Cocoa Banana Whole Grain-Rich Cookies

Stir bananas, cocoa and cinnamon into whole-grain muffin mix for a fun cookie that works as a sandwich cookie with peanut butter inside.

Bananas, overripe, mashed

Cocoa powder, unsweetened

Cinnamon, ground

  1. Place all ingredients in a mixer bowl with a paddle attachment.
  2. Mix on low speed 4-6 minutes or until dough comes together and pulls away from bowl.
  3. Press dough into a greased or parchment-lined half sheet pan; chill approx. 20 minutes or until firm.
  4. Remove chilled dough from sheet pan and cut into 1 x 1 squares (16 x 12).
  5. Place slices in a 8 x 9 pattern on greased or parchment-lined full sheet pans and bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 4 minutes of baking.
