Batter
  1. Place figs and orange zest into food processor and blend for approx. 20 seconds; set aside.
  2. Pour 1/2 of total amount of water into mixer bowl and then add total amount of mix. Mix using a paddle attachment on medium speed for 2 minutes.
  3. Add remaining water gradually while mixing on low speed. Stop mixer, scrape bowl and paddle.
  4. Add zest and fig mixture to batter; mix on low speed for 2 minutes. Do Not Overmix.
  5. Place cake batter into greased or parchment-lined full sheet pan and bake as directed below.

*Rotate pans baked in convection oven one-half turn (180°) after 12 minutes of baking.
Fig Sauce
  1. Place wine in a saucepan and bring to a rolling boil over med-high heat.
  2. Add figs and boil for 10 minutes (maintain the boil for full time); wine should reduce by approx. half.
  3. Remove sauce from heat and add honey.
  4. Add hot sauce carefully (including whole figs) to the bowl of a food processor and blend for 10-15 seconds, or until all ingredients are incorporated into a smooth sauce.
Finishing
  1. Pour sauce over whole, uncut, warm cake and spread evenly.
  2. Cut cake into 2/3-inch servings and serve immediately.
