Butter, unsalted

Yellow onion, diced

Prep
  1. Thaw biscuits at room temperature for approx. 10 minutes.
  2. Cut biscuits into 1-inch pieces and place in the bottom of greased 2-inch, half hotel pan; set aside.  
Assembly
  1. Melt butter in nonstick pan over medium heat; add onion and cook until tender and translucent, about 2 minutes.
  2. Add spinach and garlic, cooking about 2 minutes until spinach is fully wilted; remove from heat and set aside.  
  3. Whisk together liquid eggs, milk, salt, mustard, cayenne pepper and black pepper in large bowl. 
  4. Stir in cooked vegetables and half of the shredded cheese; pour over biscuits in pan.
  5. Top with remaining cheese; cover with plastic wrap and refrigerator overnight to allow biscuits to soak in liquid.
  6. Remove plastic and allow to sit at room temperature for at least 30 minutes.
  7. Cover with greased aluminum foil tent, making sure foil does not touch top of biscuits.
  8. Bake as directed until eggs are firm, the top is golden brown and the internal temperature is 165° F; allow to stand for 10 minutes before portioning.

*Rotate pans baked in convection oven one-half turn (180°) after 17 minutes of baking.

  • Serve with your favorite hot sauce or salsa.

  • Mix up the fillings by adding cooked sausage, bacon, or mushrooms.
