Prep
  1. Thaw biscuit dough, covered, either at room temperature 15-30 minutes until flexible or refrigerated overnight.
Filling
  1. Combine cream cheese, sugar, lemon juice, vanilla, and salt in the bowl of a stand mixer fitted with a paddle attachment.
  2. Mix at low speed to form a thick paste; increase to medium speed until soft and smooth.
  3. Stop mixer and scrape bowl and paddle with a spatula.
  4. Switch to a whisk attachment and pour in heavy cream; mix at low speed to combine.
  5. Stop mixer and scrape bowl; increase to high speed and whisk until the mixture can hold stiff peaks, approx. 3 to 5 minutes.
  6. Transfer filling to piping bag and refrigerate 1-2 hours.
Biscuit Tacos
  1. Stir together sugar and cinnamon in a medium bowl; set aside.
  2. Roll out dough into 5-inches in diameter using flour as necessary.
  3. Shape each piece of dough around the end of an 8-inch stainless steel spatula to form a taco shape.
  4. Fry in oil preheated to 350°F for 2-3 minutes until deep golden brown and fully cooked.
  5. Remove from oil, drain and toss in cinnamon sugar mixture; hold at room temperature.
Assembly
  1. Cut 1/2-inch off the tip of Filling piping bag; pipe a line (approx. 0.75 oz) into the bottom of each Biscuit Taco.
  2. Add 1 Tbsp pie filling and drizzle with 1/2 tsp dulce de leche; serve immediately.
