Almond Filled Shortbread Cookies

Tender, crumbly shortbread is over-the-top delicious when you add almond paste. Fill the thumbprint in these gems with sliced almonds.

Filling
  1. Add paste, sugar, zest and eggs in mixer bowl with paddle attachment; mix on low speed 3-4 minutes until well combined.
  2. Set aside until needed.
Dough
  1. Add cake mix and butter in mixer bowl with paddle attachment; mix on low speed 3-4 minutes or until dough comes together and pulls away from bowl.
  2. Deposit #30 scoop of dough in 4 x 6 pattern on parchment-lined full sheet pan.
  3. Thumbprint center of each cookie and pipe in 1 tsp almond filling.
  4. Sprinkle 1/2 tsp sliced almonds and bake as directed below.
