Conchas or Molletes (Mexican Shells) Using Pan De Huevo Dough made from Pillsbury "Panaderia Hispana" Pan Dulce Base
Ingredients:
27 lb Pan de Huevo Dough (for about 16 dozen 2 oz. Conchas)
(Prepare using bag directions for Small Batch from Pillsbury 'Panaderia Hispana' Pan Dulce Base)
9 lb Pan Dulce Topping
Method:
Prepare Pan Dulce Topping Recipe
Divide dough into 2 1/4 - 2 1/2 oz. pieces and shape into rolls.
To Assemble Conchas:
1. Place fifteen (15) dough pieces (3 x 5 pattern) onto a parchment lined sheet pan.
2. Coat the entire surface of the dough piece with a brush dipped in oil, melted shortening or cover your hands with soft shortening and use them instead of the brush. This helps topping to adhere to dough.
3. Allow dough piece to relax at room temperature for about 15 minutes.
4. Knead Pan Dulce topping on a lightly floured bench and work into 1 inch diameter rope. Cut rope into 3/4 oz sections.
5. Flatten out the 3/4 oz. piece of pan dulce topping with your hand until it is approximately 2 1/2' in diameter.
6. Place the Pan Dulce topping on the dough piece and use your hand to press the dough piece gently so it expands to 4' in diameter. Take care not to press the center down too hard.
7. Cut a design of your choice in the pan dulce topping by using a round cutter or bench scraper.
8. Proof with moderate moisture (80%) and moderate heat (85-95 deg. F) for approximately 1 hour.
9. Bake in a rack oven at 360 deg. F for 12-15 minutes or until golden brown.
Pan Dulce Topping Recipe:
2.5 lbs. Sugar
2.5 lbs. Shortening
4 lbs. Patent Flour
1. Beat Sugar and Shortening together on medium speed until light and fluffy. Scrape bowl.
2. Add flour and mix on low speed for 1-2 minutes or until smooth.
3. Color the topping using food coloring or leave as is for white topping.
4. Make chocolate pan dulce topping by adding 2 oz cocoa to 8 lbs 14 oz of Pan Dulce topping and mixing on low speed for 1-2 minutes or until smooth.
