Whole Grain-Rich Kañiwa Lemon Blueberry Burst Pancakes

Add the grain kañiwa to pancakes made with Gold Medal™ Whole Grain Complete Pancake Mix. Kañiwa shares many characteristics of quinoa, but it's slightly sweeter taste makes it a great complement to whole-grain pancakes.

Lemon zest, packed

Dark brown sugar, packed

Blueberries, fresh

  1. Place water, Kañiwa, zest, juice, and brown sugar in mixing bowl; whisk until well blended.
  2. Add pancake mix to bowl; mix using whisk or rubber spatula until batter is blended and smooth. Do not overmix.
  3. Fold blueberries gently into mixture. Deposit 2 oz batter onto a preheated, lightly greased griddle set at 375°F.
  4. Cook 1 minute/side or until pancake turns golden brown and edges begin to dry.

  • If desired, serve with maple or blueberry syrup.
  • Note: A serving of “whole grain-rich” food must meet portion size requirements for the Grains/Breads component as defined in FNS guidance and meet at least one of the following: (a) the whole grains per serving is less than or equal to 8g, (b) the product includes the FDA whole grain health claim on package, or (c) product ingredient listing lists whole grain first, or second ingredient after water.
