Tropical Fruit Parfaits

Layer yogurt with canned tropical fruits (mango, pineapple, papaya, mandarin oranges), and top it off with crunchy granola.

Diced pineapple, canned in juice, drained

Mango, canned in lite syrup, drained, diced
1 lb
2 cups
Diced papaya, canned in light syrup, drained
1 lb
2 cups
Mandarin orange segments, canned in juice, drained
1 lb
2 cups
  1. Add coconut and fruit together in large mixing bowl; mix to combine.
  2. Place 3 oz (approx. 1/2 cup) fruit mixture in bottom of each 12 oz parfait cup.
  3. Pipe 1/4 cup (approx. 2 oz) yogurt into each parfait.
  4. Repeat layers (3 oz fruit mixture, 1/4 cup yogurt).
  5. Top each parfait with 3 Tbsp (approx. 1 oz) granola, cover with domed lid and serve.

  • Tip: These can be made 1 day in advance, just add granola before serving; hold under refrigeration no longer than 2 days.
