Light, fluffy thin pancakes get a jump start from pancake mix, and wrap around a dreamy cream filling with fresh strawberries.

Crepes
  1. Combine water, yogurt, egg whites and whole eggs in a large stainless mixing bowl and whisk until well blended.
  2. Add pancake mix and whisk until well combined.
  3. Deposit 2 oz of batter onto a preheated, lightly greased griddle set at 375°F.
  4. Grill 1 1/2 minutes on each side or until crepe is light golden brown and edges begin to dry.
Filling
  1. Combine yogurt, whipped topping and diced strawberries in large stainless mixing bowl with rubber spatula.
  2. Stir until mixture is light and airy and well blended.
Finishing
  1. Deposit 1 oz (#24 scoop) of strawberry mousse down center of each crepe and roll up.
  2. Dust each crepe lightly with powdered sugar.

  • If batter thickens upon standing, add additional water in 1/2 cup amounts and stir to combine.
