Ginger Whipped Cream
  1. Beat cream, ginger and sugar in mixing bowl to soft peaks with whisk.
  2. Keep cool until needed.
  1. Combine water, ginger, lemon juice, lemon zest and pancake mix in mixing bowl with whisk until batter is blended and smooth.
  2. Deposit 2 oz batter onto lightly greased 375°F griddle; cook 1 1/2 minutes on each side or until pancake puffs and turns golden brown and edges begin to dry.
  3. Serve each pancake with 1 oz syrup, 1 Tbsp Ginger Whipped Cream and a lemon slice garnish.
