Apple Cinnamon Pancakes with Apple Syrup

Diced apples are sweet and fabulous in moist whole-grain pancakes served with an fruity, cinnamon-nutmeg topping.

Sliced apples, canned in water

Water, cool approx. 72°F

Cinnamon, ground

Apple Syrup
  1. Mix sugar, cornstarch, cinnamon and nutmeg in saucepan.
  2. Stir in apple juice and lemon juice.
  3. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute.
  4. Remove from heat; stir in butter and set aside.
Pancakes
  1. Drain sliced apples and dice into 1/4-inch pieces.
  2. Pour water and diced apples into mixing bowl. Add pancake mix and cinnamon.
  3. Using a whisk attachment, mix on low 30 seconds.
  4. Stop mixer, scrape bowl and whisk. Mix on low for about 30 seconds longer or until batter is blended and smooth. Do not overmix.
  5. Deposit 2 oz batter onto preheated, lightly greased griddle set at 375°F.
  6. Grill 1 1/2 minutes on each side or until pancake turns golden brown and edges begin to dry.
  7. Serve each pancake with 1 oz Apple Syrup.
