Jalapeño Cheddar BLT Scone-wich

This classic BLT gets and instant spicy kick from the Jalapeño Cheddar Scones used instead of traditional bread.

Prep
  1. Place scones on parchment-lined sheet pan and bake as directed below; cool completely.
  2. Combine mayonnaise, cilantro and lime juice in small bowl; stir until completely blended then cover and refrigerate until needed.

*Rotate pans baked in convection oven one-half turn (180°) after 9 minutes of baking.
Assembly
  1. Split cooled scones in half, horizontally.
  2. Spread 1 Tbsp mayonnaise mixture on cut side of each scone half.
  3. Add 2 slices of bacon, 1 slice tomato and 1 piece lettuce to bottom piece of scone; add top half of scone.
  4. Slice scone-wich in half and serve.

  • For a heartier scone-wich, add 2 slices of avocado. Note nutrition information will change.
