Grown up PB&J

This not-so-classic PB&J swaps sweet and spicy pepper jelly for the grape version, then adds peppery arugula and bacon on a flaky croissant for an adult riff on everyone’s first favorite sandwich.

Peanut butter, creamy

Hot pepper jelly, warmed

Baby arugula

Think-cut applewood smoked bacon slices, cooked

Prep
  1. Bake croissants as indicated on package; allow to cool for 1 hour.
Assembly
  1. Slice cooled croissant in half; spread 1 Tbsp peanut butter on inside of top piece and 1 Tbsp hot pepper jelly on inside of bottom piece.
  2. Add a few pieces of arugula on bottom piece.
  3. Halve 1 bacon slice and place on top; add remaining croissant piece and secure with skewers.
  4. Cut in half and serve.

  • Nut free? Skip the peanut butter and place a slice of mozzarella before adding the arugula and bacon.
