Fiesta Corn Squares

Whole grain muffin squares are kicked up with corn, cheddar and spicy jalapeños.

Diced jalapeño peppers, canned, drained

Whole kernel corn with red and green peppers, canned, drained

Cheddar cheese, shredded

  1. Mix water and muffin mix in mixing bowl with rubber spatula until well blended.
  2. Fold jalapeño peppers and corn into batter. DO NOT overmix.
  3. Deposit batter evenly into generously greased or parchment-lined full sheet pan; sprinkle cheese on top.
  4. Bake as directed below; allow to cool slightly, cut into squares and serve.
