Blueberry Salad

Serve Blueberry Chex as the croutons on this blueberry and chicken strip salad for added crunch and flavor.

Romaine lettuce, chopped

Cucumber, sliced

Blueberries
1/2 cup
Chicken strips, prepared, held warm

Hard boiled egg, diced
1/2 each
Ranch dressing, prepared

  1. Portion 2 cups romaine lettuce onto serving tray; add 1/4 cup cucumber slices and 1/2 cup blueberries.
  2. Place 1 oz prepared chicken strips and 1/2 of a hard boiled egg on top.
  3. Serve with 2 oz Ranch dressing and Blueberry Chex as the croutons on the side.

  • Make Blueberry Ranch dressing by stirring in 2 Tbsp frozen blueberries to 1 cup of Ranch dressing if desired.
