Bananas Foster Parfait

In an updated take on the New Orleans dessert classic tangy yogurt, crunchy granola and chocolate layer up with sweetened bananas, parfait-style.

Servings: 7 servings (1 serving = 10.5 oz parfait)
Bananas Foster

Brown sugar, packed

1 cup
Cinnamon, ground
1/2 tsp
Bananas, sliced
1 lb 8.00 oz
4 1/2 cups
Rum
1 oz
2 Tbsp

Bananas Foster
  1. Heat butter, brown sugar, and cinnamon in large sauté pan over medium heat, stirring until sugar dissolves.
  2. Stir in bananas; cook until softened, about 2 minutes then add rum and stir.
  3. Remove from heat and refrigerate until cool.
Assembly
  1. Spoon 2.5 oz Bananas Foster mixture into bottom of 12 oz parfait cups.
  2. Top with 3 oz yogurt, 0.5 oz granola, 3 oz yogurt and 2.5 oz Bananas Foster mixture.
  3. Garnish with 2 tsp each of chocolate and granola.
  4. Serve immediately or hold under refrigeration until ready to serve.
