Red Beet Quick Bread

This quick bread has an unusual ingredient, red beets that reminds us of the red velvet coloring in a natural yet delicious way.

Applesauce, unsweetened

Cocoa powder
1/2 cup
Cinnamon, ground
1 Tbsp
Nutmeg, ground
1 1/2 tsp
Semi-sweet chocolate chips

  1. Stir water, beets and applesauce in mixing bowl with whisk until well blended; add muffin mix, cocoa powder, cinnamon and nutmeg.
  2. Mix until batter is smooth; fold in chocolate chips.
  3. Deposit batter into sprayed or parchment-lined full sheet pan.
  4. Bake as directed below; allow to cool before portioning.
