Carrot Pineapple Whole Grain-Rich Muffin Squares

Stir shredded carrots, crushed pineapple and spices into a whole-grain muffin mix, and bake into yummy breakfast bars.

  1. Stir water and undrained pineapple in mixing bowl with whisk until well blended; add muffin mix, cinnamon and ginger.
  2. Mix until batter is smooth; fold in carrots and cranberries. DO NOT overmix.
  3. Deposit batter into parchment-lined, or greased full sheet pan.
  4. Bake as directed below; allow to cool before portioning.
