Lemongrass Cilantro Flatbread

Serve fresh-baked flatbread made from frozen whole-grain biscuits with an Asian-inspired lemongrass sauce.

Lemongrass, white parts only, pureed

Fish sauce

Flatbread
  1. Thaw biscuit dough puck under refrigeration.
  2. Preheat cast iron skillet (or other high heat proof baking pan).
  3. Spray two pieces of parchment paper with pan spray; place thawed biscuit puck between sprayed sides.
  4. Roll biscuit to 1/4-inch thickness using a rolling pin or tortilla press.
  5. Remove top piece of paper; place the biscuit flatbread onto the preheated cast iron skillet (or other high heat proof baking pan).
  6. Bake as directed below; serve immediately or let flatbread cool completely and store in airtight container.

Lemongrass Cilantro Salsa
  1. Deposit all sauce ingredients into food processor with blade attachment; pulse until well blended (leave chunky or pureed to a pesto-like consistency as desired).
  2. Refrigerate for at least 30 minutes to let flavors develop.
Assembly
  1. Deposit 1 oz (1 Tbsp) of Lemongrass Cilantro Salsa evenly onto one side flatbread crust.
  2. Place in oven to refresh the crust and heat the sauce as directed below.
