Prep Instructions
Yield:
2 ¾” Cutter (½” thickness): Full batch: 64 biscuits; Half batch: 32 biscuits.
3” Cutter (½” thickness): Full batch: 51 biscuits; Half batch: 25 biscuits.
#20 Scoop (Drop Biscuits): Full batch: 59 biscuits; Half batch: 29 biscuits.
For optimum volume, place biscuits close together on a lightly greased or paper-lined baking sheet.
Ingredients:
Full batch, use 5 cups (2 lb 8 oz) of cool water or milk, 5 ⅔ cups (3 lb) of cool buttermilk, and a full 5 lb box of mix.
Half batch, use 2 ½ cups (1 lb 4 oz) of cool water or milk, 3 cups (1 lb 8 oz) of cool buttermilk, and half a 2 lb 8 oz box of mix.
Mixing Directions:
Hand Mixing: Pour the total liquid into a mixing bowl. Add the biscuit mix. Mix with a rubber spatula for approximately 30 strokes, or until a soft dough forms. Do not overmix. Place the dough on a floured surface. Dust the dough with flour and fold it in half lengthwise. Do not knead. Divide the dough in half. Roll out each piece of dough to ½” thick.
Machine Mixing: Pour the total liquid into the mixer bowl. Add the biscuit mix. Mix using a paddle attachment on low speed until the liquid is incorporated (approximately 15 seconds). Scrape the bowl and paddle. Mix on low speed for 15 seconds. Do not overmix. Place the dough on a floured surface. Dust the dough with flour and fold it in half lengthwise. Do not knead. Divide the dough in half. Roll out each piece of dough to ½” thick.
Baking Instructions:
Convection Oven: Bake at 400°F for 11-13 minutes, rotating the pans halfway (180°) after 4 minutes.
Standard Oven: Bake at 450°F for 13-15 minutes.
Do not overbake. Biscuits are fully baked when light golden brown and the breaks along the sides are dry.
High Altitude (2500 ft. and above): Follow package directions for preparing the biscuit mix. Increase the oven temperature in both convection and standard ovens by 25°F.
